Disney Cruise Line’s Lobster Ravioli

Disney Cruise Line’s Lobster Ravioli

This lovely dish is served in Enchanted Garden on the Disney Fantasy and the Disney Dream. On Fantasy and Dream sailings that offer the “Anyone Can Cook” activity you can watch a DCL chef cook this dish, and then they provide you with a sample (along with a bit of wine to compliment) and the recipe. You can download a PDF of the recipe by clicking here. Bon...

Slow Cooker Revolution’s Chili Mac

Slow Cooker Revolution’s Chili Mac

I bought this book, “Slow Cooker Revolution” because I was looking for some interesting slow cooker recipes. The point, I thought, of a slow cooker was that you’re supposed to be able to throw a bunch of stuff in the bowl, turn it on, and then leave it for hours with a perfectly cooked dinner at the end. If that’s what you think of slow cookers too you might want to stay away from this book. With that said, this chili mac recipe is one of the simpler recipes though you still have some pre-cooking to do. Pre-cooking involves browning some beef and simmering it with several herbs. The slow cooker time is only 2 hours. You start the whole thing by making a bread and milk paste that you mix with the ground beef. I don’t make meatballs, like ever, but I believe you do the same with meatballs? Here you can see the bread paste mixed into the beef. One of the things this book does teach...

Disney Cruise Line’s Magic and Wonder Dish: Grilled Shrimp and Seared Scallop Pasta

Disney Cruise Line’s Magic and Wonder Dish: Grilled Shrimp and Seared Scallop Pasta

Let’s just start with a photo of the end result, shall we? I actually cooked this weeks and weeks ago. Started the blog post and then left it to return at a later date. Apparently a much later date! Looks good, don’t it? This Disney recipe comes to you again from the “Delicious Disney” cook book. The dish comes from the Disney Cruise Line and you can enjoy it on the Disney Magic or Wonder. I can tell you from personal experience that both boats (and their food) are amazing. You’re off to a good start when you saute shrimp and scallops in butter. Sauteed spinach and garlic. No brainer folks. Final steps include pasta sauce and noodles. It’s a very simple dish to throw together. Good for a week night. Good for the belly....

WDW Contemporary Resort: Steakhouse Salad

WDW Contemporary Resort: Steakhouse Salad

Today’s recipe comes from “Delicious Disney”. Many of the recipes seem a tad ambitious, at least for me. There is, however, a section on “casual” foods. Those I can handle. I don’t often do entree salads but if there’s ever a salad I can handle it’s one with steak! I do believe this is the first time I’ve cubed up steak like this. Little weird not just throwing it on the grill all whole like. I love my mortar and pestle. I SUPER love the fresh ground pepper you can get from using one! Smelled pretty great. And we jump on over to “done”. You didn’t see the tortillas I flame grilled to charcoal on my grill. These ones I did in a grill pan in the safety of my kitchen. Suckers char up quick! Goat cheese and onions and steak. I mean really. Can’t go wrong. Now, I have not had this salad at the Contemporary Resort so I cannot say how well I did. It did the...

Grilled Pizza

Grilled Pizza

Blue cheese and peach pizza aside, it’s been awhile since I’ve done a home made pizza post. Let’s all just feast our eyes. Four cheeses. Well… it’s round-ish. I should work on that. Summertime pizza grilling. Forgot to take a pic before taking a bite. It just looked so tasty! It never gets old, does...

Peaches and Blue Cheese Pizza

Peaches and Blue Cheese Pizza

I was watching the movie “What to Expect When You’re Expecting” and in it are a couple of people that own and run food trucks. They both featured cheese and in the movie the girl mentions a blue cheese and peach pizza. That little bit right there saved the movie for  me (which is kind of awful). Pitas make pretty excellent mini pizza crusts. I put basil, sauteed onions, blue cheese, peaches, and prosciutto. Pretty! Looks delicious! Too hot for turning on the oven, so onto the grill it goes! It was really good, but I did decide I’d try using Stilton cheese the next time. Which I have, and it was better. You should try it!...
