Ella says my popcorn is the best she has ever had. Even better than movie theater popcorn. I thought I’d share how I make it! First, hot air pop it. I haven’t tried this with popcorn done in a frying pan with oil. That might be good too. My toppings are salted butter (unsalted will work too), Parmesan cheese, and truffle salt. I bought my truffle salt at the truffle shop at the Pike Place Market. You can buy it on Amazon, but if you’re in Seattle or Tacoma you can also get it at Metropolitan Market. I saw it in the cheese/deli/hot foods area. It might exist wherever they keep the Morton’s too, not sure. My jar has lasted me quite awhile, so don’t let the cost of Truffle salt scare you away. It’s worth the splurge. I almost always have a block of Parmesan in my fridge, but you could use just about any hard cheese like asiago, grana padano, romano, etc. Grate it up good. Hard...

My friend Jaime shared this recipe with me many, many years ago. It’s always a big hit at parties. Ingredients 1 Can refried beans 2-3 Ripe Avocados 2 Tsp lemon jice 1 Cup sour cream 1/2 Cup Mayo 1/2 Pkg taco seasoning 1 Can sliced olives 2 Small tomatoes chopped 3 Green onions chopped 3-4 Cups shredded cheddar cheese   Directions Smash avocados, mix in lemon juice and refried beans, and spread in pan or tray. In a separate bowl, mix sour cream and mayonnaise with half of the package of taco seasoning. Spread shredded cheese in pan, cover layers completely. Spread olives, tomato, and onions. My family has this dish at nearly every holiday, save Thanksgiving when there’s already mashed potatoes present. I say this but my sister will go ahead and make escalloped potatoes because she feels she needs them. This is one of my all time favorite things to eat. It’s a side dish at our holiday gatherings but you can turn it in to a main course simply by adding cubed ham. After Easter I had so many left overs that I was adding cubed ham to it for lunch days later. So, you can read this, right? Good. First up is 2 cups of cheddar cheese. Add to that a can of cream of chicken. Then 2 cups of sour cream. I always use fat-free. The recipe calls for 36 oz of hash browns but I don’t know where you find a bag of 36 ounces, so I put about a bag and a half. Hands-On Preparation Time: 5 minutes Overall Time: 2.5 hours Cooking Time: 10 minutes Serves: 4 POINTS® Value:5 Ingredients 1 lb salmon fillet(s) 1/2 cup low-sodium soy sauce 1 Tbsp red cooking wine 1/4 tsp dried ground ginger or 3/4 tsp freshly grated ginger root 1/4 tsp ground black pepper minced garlic, as much as you want Instructions Combine all ingredients but the salmon in a resealable plastic bag. Shake vigorously to mix. Add salmon to bag, squeeze out excess air, and seal. Refrigerate, turning frequently to keep all sides in contact with the liquid, for no less than 2 hours. Preheat grill for medium high heat (alternatively, preheat oven for broiling) Cook for about 5 minutes per side, basting freely with extra marinade.
