Apple-Cheddar Soup with Bacon

Recipe courtesy of the current Cheese issue of Food Network magazine (a subscription for which I thank my sister Katrina for!). Isaac kept raving over this one. Not calorically safe though, just FYI. I think it’s 495 calories per serving. Yikes. :/ Here you can see the ingredients all ready to go. I am the slowest cook over, else I think the writers of recipes fudge a smidge. It says 40 minutes but it took me an hour and 20 minutes. I think they start counting time after everything has been measured and chopped and diced and sliced. I think that’s misleading. But any how… here my apples, apple, and onion are peeled and chopped and stock and apple juice are measured out, and my pepper is freshly ground. Cooking the apples, potatoes, and onion. Now simmering until potatoes are tender. Making croutons! Cute little crouton squares! Cheese time. I don’t make much use of my blender so it was fun to get it out and puree the soup....

Left my heart in Disney

We are back from what was our 4th Disney cruise and 3rd visit to Walt Disney World. We are serious Disney people. What’s not to love when you’re surrounded by whimsical magic 24/7? We are already set for our 5th Disney cruise which will be winter of next year. Some one win me the lotto so I can quit my job and go on a permanent vacation! I know. Every one’s dream come true. Gastricaly, it was also amazing. We took the red eye from SEA to MCO (that’s Orlando) and arrived in FL at 6am. That’s early, and our flight was hellacious as there was a screaming baby nearly the whole way. I also suffer from Restless Leg¬†Syndrome¬†and I had myself some very uncomfortable moments. After arriving at MCO and getting our rental car we headed to Keke’s Breakfast Cafe, a restaurant I found on Yelp several weeks before we left for our trip. I love french toast and theirs was good!
