Chicken Parm is one of my most favorite foods and I’ve made several different versions. Found this version in the most recent issue of Cooking Light. Every parm recipe involves the pounding of chicken. Good way to get out some aggression! Cut up a day old baguette. Gonna make breadcrumbs! Throw bread in a food process and pulverize it. Mix with basil and Parmesan cheese. Here we have tomato puree, more parm, and some other stuff… salt and pepper flakes and garlic probably. Simmering the chicken in the sauce.
