Whenever I think of the Polynesian Resort at Walt Disney World the music from the Enchanted Tiki Room plays in my head… The Hawaiian War Chant song. That’s where the title of this blog post came from. The Polynesian has a restaurant by the name of Captain Cook’s. They make the  most amazing pork nachos there. I decided I needed to try and replicate them. I was only mildly successful, though they did taste good. First you need white corn tortilla chips and plain, unsalted potato chips. I think we used the Kettle brand. To really do this right I think you’d fry up your own tortilla and potato chips. But, really? We bought sauce less pulled pork at the grocery store and looked up a recipe for Hawaiian glaze. The recipe I found called for quite a lot of orange juice so I halved that and added a good deal more Worcestershire and soy sauces. Tasted it until it tasted about right.
