WDW Contemporary Resort: Steakhouse Salad

Today’s recipe comes from “Delicious Disney”. Many of the recipes seem a tad ambitious, at least for me. There is, however, a section on “casual” foods. Those I can handle. I don’t often do entree salads but if there’s ever a salad I can handle it’s one with steak! I do believe this is the first time I’ve cubed up steak like this. Little weird not just throwing it on the grill all whole like. I love my mortar and pestle. I SUPER love the fresh ground pepper you can get from using one! Smelled pretty great. And we jump on over to “done”. You didn’t see the tortillas I flame grilled to charcoal on my grill. These ones I did in a grill pan in the safety of my kitchen. Suckers char up quick! Spice Rubbed NY Steak

We’ve been experiencing summer weather around here and so it’s time for some summer time food. I almost have lots of corn meal around and nothing’s simpler and easier to pull together than corn bread. You just need about 40 minutes from start to finish. I looked up a recipe online and found this one, to which I made to alterations. First, I happened to have heavy whipping cream on hand and so used that rather than the half and half, and I used a sugar substitute instead of real sugar. It was probably the best corn bread I’ve ever made. This poor recipe is was only achieved half way. It calls for a serrano chile, which by the time I got around to doing the recipe had gone bad. I had also used up all of my avocados and I hadn’t been able to find chipotle chilli powder (several days later though I did… figures).
